{Recipe} Penne with Peppers and Sausage

It's no surprise that I am doing Weight Watchers and having really great results so far.

The biggest thing for me has been portion control and the snacks that I eat.  I used to snack on almonds...not anymore.

We have been eating lots of the frozen dinners recently just because it's easy.  But I was getting tired of them.  I went on WW's website last week and scoured to find some new recipes.  Who doesn't love finding a new recipe?  

I found quite a few that were within my points that I was willing to eat, and printed them off.  Tonight I tried my first new WW recipe.  I would add a little more salt to it (or more spices in general), but overall it was really good.

Here's the recipe:

Ingredients

Instructions

  • Coat a large nonstick skillet with cooking spray and set pan over medium-high heat. Add green pepper, garlic, onion and mushrooms; cook, stirring frequently, until almost tender, about 7 to 8 minutes.
  • Remove turkey from casings; add turkey to skillet and brown until no longer pink, stirring occasionally, breaking it up with a wooden spoon as it cooks, about 6 minutes. Add oregano, salt, black pepper and red pepper flakes; stir in tomatoes. Simmer until heated through and to allow flavors to blend, about 5 minutes.
  • Spoon penne into a deep serving bowl; top with sausage mixture and sprinkle with cheese. Yields about 1 1/2 cups per serving.

Notes

  • During busy weeknights, streamline the preparation using frozen bell pepper strips or frozen diced bell pepper strips and onions.

    Use a high quality Parmesan cheese for maximum flavor. Just a small amount can completely transform your favorite Italian recipes.

This is straight from their website.  I added an extra can of tomatoes to the sauce and I used a pound of turkey.  It turned out really well.  Like I said before, I would probably double the spices though to give it a little bit more of a kick, but otherwise it was really good.  Jeremy liked it as well.
